Better results from your workouts come from boosting the nutrition of your eating. This salad is the ultimate for boosting the nutritional quality of your diet. It’s jammed packed with protein and nutrition. Best of all you can make it in 5 minutes. The CK comes from the 11 plant foods that start with the letter ‘c’ or ‘k.’ As a result of all ingredients starting with the same sound, makes the shopping list real easy to remember.

kidney beans, canned1 x 400g can
chickpeas, canned1 x 400g can
cannellini beans, canned1 x 400g can
corn kernels, canned1 cup
carrots, fresh2
cucumber, continental, fresh
red onion (not a c/k food but it is chopped!)1
capsicum, red, fresh1
celery stalks, (include leaves)3
olives, kalamata, pitted, sliced, jar50 g
coriander leaves, fresh cup
feta cheese, dairy free90 g
Note - other cheese choices, dairy free cheddar or mozzarella cheese!

  1. Place all beans and corn into a sieve / colander. Rinse thoroughly and drain well. Transfer into a large salad bowl.

  2. Dice carrots and cucumber and finely chop onions, capsicum and celery. Drain olives, loosely chop coriander leaves and cut feta cheese into small cubes.

  3. Add all ingredients to the salad bowl and mix together well. Plate up and enjoy.

  4. TCB Tips:

    - Enjoy as a complete meal on its own, and / or makes for a great side-dish for other meals.
