These are quick n easy, taste great and packed with goodness! My Hot Cakes are delicious hot or cold and perfect to freeze. Add to salads, steamed vegetables, or pop them into a wrap. High in nutrition and so versatile the whole family will love them. 

chicken breast mince, ground, extra lean500 g
butternut pumpkin, remove skin and seeds, chop into wedges/pieces450 g
spring onions, fresh, finely sliced5
garam masala, ground1 tsp
basil leaves, fresh, chopped cup
cracked pepper to season
eggs, whole, fresh2
canola oil cooking spray
corn flour1 tbsp

  1. Place chicken mince into a large mixing bowl. Next grate pumpkin pieces, then add to the bowl together with the spring onions, garam masala, and fresh herbs. Stir through to combine.

  2. Add eggs, and flour, and season with pepper. For best results, use your hands to combine ingredients thoroughly. *Note - you may need to add extra flour (1-2 tbls) if the patty mix is too runny. The flour helps to combine ingredients and soak up excess juices. 

  3. Shape mixture into 16 cakes. Heat the frypan and spray with oil. Cook cakes in batches of 4-6 for 2-3 minutes per side. Serve immediately with a salad, or steamed vegetables, or add your choice of a high-energy carbohydrate to consume after your workout!

  4. TCB Tips: 

    - The Hotcakes can also be cooked on the barbecue grill or baked in the oven in a small muffin cooking tray - approx. 15 mins at 180˚C. 

    - They're great for a quick and easy snack in the kid's lunch boxes too!
